I don't watch a lot of documentaries but here's a few I liked and think are worth watching:

"Expelled: No Intelligence Allowed" is good. Ben Stein is a smart guy, and the film addresses shortsightedness in the scientific community.

"Super Size Me" is fun to watch, not exactly shocking results from eating trash constantly but it's good to document the dramatic effects on health regardless.

"Leaders for Life" is hard-hitting but doesn't really provide any particularly new insights or anything, though it features lots of experiences and information that's brushed under the rug these days.

"The Last Blockbuster" isn't about science, religion, health, or politics but good ol' nostalgia. That's all it really has going for it though as it isn't a particularly good film in itself. Dat nostalgia though. I'd like to visit the last Blockbuster some day, got some nice memories in them.

I think the first three are pretty important, last one maybe not so much, unless you've also got a fondness for Blockbuster.
