Sylvester Stallone (Rocky IV)
James Wood (Final Fantasy: Spirits Within)
Clint Eastwood (Gran Torino)
Jean-Claude Van Damme (Street Fighter)
Chuck Norris (Top Dog)
Jackie Chan (Rush Hour)

Jackie Chan seems like he'd be easy to get along with, so dinner with him would probably be the best choice from a personality perspective. Concerning their actual roles though, Vic Mignogna would be the most interesting for me to talk with as a fan. James Wood is a phenomenal actor but he seems a bit uptight so he'd be my last pick for dinner.
